Send yourself an email for every new submission, send the respondent a confirmation, and write either one with the answers that were just given.

Tinyform can send an email automatically whenever somebody completes your form. You can set up a notification for yourself, one for your respondents, and you can write either of them with dynamic fields that quote the answers from the submission it is about.
